Vegan Meal Prep: Pizza | Vegan Pizza Recipe

Hey,

It’s Monday, and I wanted to share my meal prep for the week. It’s a short week, so only a few days of meal prep. I actually do not celebrate Thanksgiving, but I do enjoy the extra time off to drive up and see my partner for the weekend! I decided to make a vegan pizza. I had some inspriation from Minimalist Baker, but I need way more spices than that, and flipped it a bit.

My boyfriend loves this recipe. I love it too. I am not into eating pizza all the time, and I admit, it took some getting used to eating pizza with no cheese, but now I completely into tweaking this recipe each time. If I ever find vegan cheese in a block, or get around to making some, I may have cheese on my pizza again.

Making the sauce is easy. I like a lot of salty things, so I am constantly sneaking some more shakes of the sea salt can. I am trying to lay off. I am not a sweets girl, but I do love savory food!

Making the sauce is simple, but I think the key in this vegan pizza is cooking the veggies BEFORE you bake the pie. I have tried it without, and it doesn’t taste nearly as good as this recipe.

After I make my veggies, I added everything to my pie shell, which I did not make from scratch, but I will one day. Just to add some extra umpfh, I decided to add some sprouts. These thing spoil so fast so I just try to use them as much as possible.

Ingredients
  • Veggies
  • 1 tablespoon of Olive Oil
  • ½ Green/Yellow/Red Bell Peppers
  • 1 cup of mushrooms
  • ½ cup of red onions
  • 1 teaspoon sea salt/Himalayan salt
  • 1 tablespoon of Oregano/Thyme/Basil
  • handful of sprouts
  • Sauce
  • 1 tablespoon of Oregano/Thyme/Basil
  • 1 teaspoon sea salt/ Himalayan salt
  • 1 6oz. can of organic tomato paste
  • 1 garlic glove graded
  • 1 wheat pizza shell
Instructions
  1. I always start with cutting the veggies up into strips and use the oil and cook the veggies until they are soft. This takes about 5-7 minutes on medium heat.
  2. While the veggies are cooking, I make the sauce. I add the garlic first, then the tomato paste and the rest of the ingredients.
  3. I add the sauce to my pizza shell, and then the sauteed veggies. I add the sprouts before I cook it I then baked in the oven for about 10-15 mins until the veggies look dark. I add the sprouts before I cook it.

Well I hope this recipe turns out well for you and you can eat it for a few days. This is one of the ways how I am able to save money. I cook and eat the same things all the time! Please like and share!
